HACKING FUNCTION :
On the Rolex 1570 the center seconds pinion is indirectly driven via the third wheel. When the crown is pulled to set the time the movement is stopped by a "hack" lever which moves to engage the teeth of the third wheel.
The hack lever blocks a tooth of the third wheel and the spring tension in the movement keeps that tooth against the hack lever.
However, if you move the hands backward you are also turning the center wheel slightly backward if the tension between the cannon pinion and center wheel is sufficiently tight (the minute hand of the watch is mounted on the cannon pinion which fits on the center wheel and acts as a slip clutch to allow time setting).
When the center wheel moves slightly backward it also drives the third wheel in reverse which may move the tooth of the third wheel blocked by the hack lever back slightly.
This, in turn, drives the seconds pinion slightly backwards (the 5 seconds you notice).
While it may be possible to adjust the hack lever to more precisely block the tooth of the third wheel in both directions (to minimize the play and more precisely "freeze" the second hand) what you are seeing is not really a problem.
